Vegan cookie dough balls – these are super easy to make and nutritious. I am always looking for a quick snack that I can have between treating patients to keep my blood sugars stable and these are the perfect solution.

This recipe requires one bowl so clean up is a breeze and the thing I like most about these is that you can make many different variations depending on what you have in the house. Swap maple syrup for honey or try peanut butter instead of cashew butter. The options are endless.

INGREDIENTS:

1 cup rolled oats
2/3 cup dried coconut
1/2 cup nut or seed butter (Cashew, Peanut, or Sunflower all work great)
1/2 cup ground flax seeds
1/2 cup vegan chocolate chips
1/3 cup agave or maple syrup (honey works too if you aren’t vegan)
1 tablespoon chia seeds (you could also try hemp hearts)
1 teaspoon vanilla extract

DIRECTIONS:

Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the refrigerator for half an hour.
Once chilled, roll into balls. Store in an airtight container and keep refrigerated for up to 1 week (that is only if they last that long).
